Chef Lam Huen-fai, chef de cuisine at the Hong Kong Jockey Club’s Moon Koon Restaurant, has devoted 40 years to mastering Cantonese cuisine. Rising from humble beginnings in traditional teahouses to leading a Michelin-recommended kitchen, he believes good cooking stems from dedication, balance and respect for heritage. Constantly refining flavours and techniques, chef Lam continues to honour tradition while inspiring the next generation of chefs.​
