Chef Esther Sham Ei-hung draws inspiration from her Shanghainese and Chiu Chow roots and the refinement of French cuisine. Founder of Maison ES, she fuses East and West with sensitivity and imagination, weaving the sweetness and boldness of Chinese flavours into French technique. For her, each dish is a reflection of heritage, creativity and identity.​

I hope to keep blending Chinese and French culinary arts, and to inspire people to travel to Hong Kong through my cooking.
